healthy chocolate chip cookies
a healthier (and gluten-free!) take on the classic chocolate chip cookie
makes about 8 cookies
•2 cups almond flour
•1 egg
•2 tbsp pb
•1/4 cup coconut sugar
•2 tbsp maple syrup
•2 tsp vanilla
•1/4 cup melted vegan butter or coconut oil
•pinch of salt
•chocolate chunks
•flakey sea salt (for topping)
steps
1. preheat oven to 350
2. in a big bowl, mix coconut oil and coconut sugar until fluffy/combined. Add in the maple syrup, egg, and vanilla.
3. sift in flour, salt, baking powder, and baking soda over wet ingredients and mix to combine. Add in chocolate chips.
4. scoop onto sheet pan & shape
5. bake for about 12 minutes
