healthy chocolate chip cookies

a healthier (and gluten-free!) take on the classic chocolate chip cookie

makes about 8 cookies

•2 cups almond flour 

•1 egg

•2 tbsp pb

•1/4 cup coconut sugar

•2 tbsp maple syrup

•2 tsp vanilla 

•1/4 cup melted vegan butter or coconut oil 

•pinch of salt

•chocolate chunks

•flakey sea salt (for topping)

steps

1. preheat oven to 350

2. in a big bowl, mix coconut oil and coconut sugar until fluffy/combined. Add in the maple syrup, egg, and vanilla.​

3. sift in flour, salt, baking powder, and baking soda over wet ingredients and mix to combine. Add in chocolate chips. ​

4. scoop onto sheet pan & shape

​5. bake for about 12 minutes
